Recently opened, Restaurant
Sauterelle completes Conran Restaurants’ gastronomic
presence at The Royal Exchange alongside the Grand Café &
Bars. Located on the mezzanine level, Restaurant Sauterelle
will offer calm and tranquil surroundings from which to view
the bustling courtyard of The Royal Exchange.
Offering simple, classic French
food in an elegant dining space Restaurant Sauterelle will
serve a short, seasonal, frequently changing menu. Inspired
by the French ‘bourgeois’ style of cooking, Stuart Smith’s
menu with include dishes such as; ballotine of guinea fowl,
goose rillettes, and Saucisson Lyonnais. Aside from a
regional focus, a selection of classic dishes including;
lobster bisque, braised rabbit with tarragon, and Château
grillé will also feature. Desserts will include: Rum baba,
chocolate fondant, and roasted winter fruits.
