Supposedly
Moscow now has one of the highest concentrations of billionaires per square
mile in the world. Whether or not this is accurate, no one can deny
the concentration of wealth that has enveloped Moscow in recent years.
Therefore it's no surprise that demand for the cuisine and wines of France
is very much on the rise. Since the days of the Czars – when French
(not Russian) was the language of choice for the elite – the appetite of the
well-to-do for classical French cooking is well documented. Indeed,
French Chefs working in Russia were the true creators of one of the notable dishes most associated with
Russia: Chicken Kiev.
