Maurice Graham Henry on French restaurants in Canada
With
it's duel French and English heritage, Canada is certainly a country where
one expects to find authentic French cooking. Nowhere is this more so
than the province of Québec. Although some of the finest restaurants there
prefer the designation "Québec cuisine" since ingredients are sourced
locally, the influence of France is nonetheless apparent in the cooking.

France's Fromageries Bel, maker of the popular
Mini Babybel cheese, said yesterday it will begin producing its The Laughing
Cow products in Canada and plans to invest $10 million in a production
facility in Québec.
